Remy Lyse, Managing Director Rex Restaurant Associates Limited
Remy gained experience in the Hospitality Industry through working for various Hotel and Restaurant groups in Europe. Before joining the Wolseley he worked on the development and construction of the Sofitel St.James in Pall Mall, which gained 5 star recognition shortly after opening. Remy stayed there for 4 years and his contribution as operation manager helped maintain the success it enjoys today.
Prior to that he worked for Conran as the General Manager for two sites and stayed with them for a number of years. Remy’s past also includes seven years at the Dorchester Hotel as Food & Beverage Manager, a number of years working in properties in Paris such as, Le Crillon Hotel, Prince de Galles Hotel and Jacques Cagna Restaurants. He started off his career in London working for Mr Roux at Le Gavroche. Prior to that he even spent his military service working for the President Mr Mitterand at Le Palais Elysees as his private wine butler.
